Toasted Tofu Steaks Coated with protein toppers

Makes 4 servings

  • 1 package (about 1/3 cup) Vegetarian Traveler Toasted Bean Blend (pepita & soy-pea medley)
  • 2 tablespoons nutritional yeast
  • ¼ teaspoon each sea salt and onion powder
  • ½ teaspoon dried oregano
  • Few turns of freshly ground black pepper
  • 1 block extra firm tofu, cut horizontally into 4 rectangular steaks
  • Olive or coconut oil

Tear the corner of the Vegetarian Traveler package slightly just to let the air out. Place package inside a resealable plastic bag and seal tight. Pound a few times with a mallet or hammer to break up the pieces.  Pour the crumbs onto a plate, and mix in the nutritional yeast, salt, onion powder, oregano and pepper.

Mist the tofu steaks with oil. Lay the tofu steaks in the crumb mixture and turn to coat all sides, pressing the “breadcrumb” mixture onto the tofu. Coat the bottom of a large skillet with oil and place over medium heat. Pan fry for about 5 minutes until golden brown, then gently flip, mist with oil, and brown the other side for about 5 more minutes.
